balsamic & goat cheese lentil wrap
This recipe is adapted from a lentil wrap recipe found in The Cooking With Trader Joe’s Cookbook. I added 2 of my favorite ingredients-goat cheese & balsamic vinegar for a tasty variation on the theme. It’s a healthy, filling meal that is sure to satisfy a big appetite. I used ingredients from a local Trader Joe’s store but you can certainly substitute with ingredients from your favorite local market. Enjoy! A Very Sweet Super Bowl

slammin’ salmon caesar salad
After the holidays, I was craving salad (it’s true!) and salmon. I’m convinced it’s my body’s defense mechanism taking over after a week of consuming holiday dinners, homemade fudge, french toast casserole and countless cocktails. Inspired by the salmon salad I ate in Vancouver, I got cookin’ and made a salmon caesar salad that was delicious (said boyfriend, too!) and made with a light yogurt based caesar dressing to cut out some of the unwanted fat and calories. 2 tablespoons of Marie’s Yogurt Parmesan Caesar dressing has 50 calories and 5g of fat compared to 2 tablespoons of Newman’s Own...

I love desserts that are so cute you second guess biting their sugar coated heads off. Think chocolate Teddy Grahams. I’ve dabbled in a few cupcake creations from the books Hello, Cupcake and What’s New, Cupcake? (check out the blog here). That’s what I’m talking about. Cute treats. Reese’s peanut butter cups, chocolate, caramel and pretzels is a sweet & salty combination guaranteed to make you salivate. DIY cranberry liqueur
The unseasonably warm temps aren’t burning my holiday spirit! I’m looking forward to getting crafty this holiday season. From my experience, things end up looking the most homemade when you make them with a glass of wine in hand. Glitter everywhere, a hot, messy glue gun, and perhaps burgundy dye à la spilled wine. Allow no one to confuse your DIY with store bought. While I have many glittery & glued DIY gifts up my sleeve, who doesn’t love the gift of a warming beverage? chicken enchiladas
Mexican food is one of my favorite go-to comfort foods. Sour cream, guacamole & cheese are 3 proverbial keys to happiness, IMHO. Recently, I hosted my first book club meeting at our house and made chicken enchiladas for dinner. To clarify, our “book club” is includes more sangria than discussion of protagonist and conflict (partly due to the fact that only 3/4 book club members actually finished the book).
