This recipe is adapted from a lentil wrap recipe found in The Cooking With Trader Joe’s Cookbook. I added 2 of my favorite ingredients-goat cheese & balsamic vinegar for a tasty variation on the theme. It’s a healthy, filling meal that is sure to satisfy a big appetite. I used ingredients from a local Trader Joe’s store but you can certainly substitute with ingredients from your favorite local market. Enjoy!
Gather:
- 2 cups brown rice (I used 1 package Trader Joe’s frozen Organic Brown Rice)
- 1/2 bag baby spinach
- 2 cups steamed lentils (I used 1 package of Trader Joe’s Steamed Lentils)
- 1 red onion, chopped
- 6 oz goat cheese (I used Trader Joe’s Silver Goat Chevre)
- balsamic vinegar
- whole wheat flour tortillas
Prepare:
- saute chopped red onion in olive oil over medium heat
- add steamed lentils to pan, stir for 5 minutes or until warm
- stir in cooked brown rice (if using Trader Joe’s prepare according to directions and add to pan)
- add spinach and heat on low until leaves are wilted

- incorporate goat cheese and stir until well combined

- spoon onto tortilla, fold and grill in panini press or pan

- drizzle balsamic vinegar over wrap & enjoy!
